
Please allow me to introduce to you my favorite salad of all time…..the Med-Italian Chopped Salad! It’s a mix between a Mediterranean salad and an Italian salad and is loaded with all of my favorite toppings!
2 cups chopped romaine
6 oz grilled chicken, chopped
1/2 avocado, diced
12 slices uncured pepperoni, chopped
2 oz grape tomatoes, halved
1 oz fresh mozzarella balls
4 pepperoncini, sliced
1 TB Italian dressing
1 TB Ranch dressing
*I usually add Kalamata olives, but I didn’t have any on hand today, unfortunately.
