Some people go meatless on Mondays. Not us! Last night, we feasted on a delicious black pepper tenderloin, grilled chicken thighs, charred veggie cauliflower rice, and a tomato and cheese salad!
The cauliflower rice is so easy to make and is the perfect dish to make if you’re needing to do a fridge clean out. Last night I grilled zucchini, red onion, sweet peppers, and mushrooms before mixing them in with the cauliflower, and then added a couple handfuls of spinach leaves. Super fast and healthy, and the kids gobbled it all up!
